 Bash’s Strawberry and Tarragon Cookies

To celebrate National Cookie Day Bash is back and has whipped up a batch of her warm strawberry and tarragon cookies.

Act fast because these baked beauties are so good that they will be tarra-gone as soon as they’re out of the oven… that’s just the way these cookies crumble!?!

Make way for the King of Herbs, tarragon! Usually used to dress salads, chicken and fish I bet you didn’t expect to be throwing this little herb into your cookie mixture?! But trust us, tarragon is simply delicious and compliments the strawberries perfectly.

Crumbly Cookies

Step 1

Firstly, cream together your unsalted butter (110g) and caster sugar (155g), then beat into the mixture one egg.

Next add your dry ingredients: plain flour (170g), salt (1tsp) and bicarbonate (1tsp).

Step 2

Chop up your strawberry and white chocolate (225g) and tarragon (10g) then add to your mixture. Stir in thoroughly, then roll into logs and cling film them.

Next, pop your logs in the freeze to set the dough.

Step 3

Once the dough is set, remove the cling film and cut your log into 1cm pieces and place on a baking tray.

Step 4

Bake in the over on 160 degrees for 12 minutes, or until golden brown. Then leave them to rest before tucking in with a big cuppa tea.
