Harvey’s Orchard Fizz

Everyone meet Harvey, our resident Bar Manager at The Fish Hotel. Normally seen shaking things up behind the bar. It would be selfish of us not to share Harvey’s easy-to-make-at-home cocktail recipes.

Which is why he’ll be treating your tastebud tingling cocktail each week. This week he’ll be making a salute to sunshine with a refreshing Orchard Fizz.

To whip up this perfect sunshine sipping cocktail you’ll need:

Three apples
1 cup of caster sugar
1 cup of white wine vinegar
Ice
Prosecco

Method: Apple Shrub

Step 1

Chop, chop. Slice up three apples. No points for prettiness they only need to be roughly sliced.

Step 2

Next heat up a large pan and add one cup of sugar.

Step 3

Then add your one cup of vinegar and stir the mixture until the sugar is dissolved.

Step 4

Then add those all-important apples to the mix. Bring to the boil and let it simmer for 20 minutes (which is just enough time for a glass of warm-up Prosecco).

Step 5

Take the pan off the heat. Let the mixture cool, strain into a bottle and pop in the fridge.

Now for the magic…

Mix 25ml of your apple shrub with 100ml of Prosecco and pour over ice. Now kick-back, relax and enjoy.
