Rich’s Chocolate and Banana Cake

Send your tastebuds tingling with Rich’s twist on a classic banana bread, with his chocolate and banana cake. Packed with rich chocolate, chopped walnuts and a hint of cinnamon this cake makes the perfect teatime treat teamed with a oh-so-satisying cuppa.

Anyone else baked enough banana bread to last the millennia? Yes, us too. However, Rich’s recipe combines dynamic and rich flavours to lift our banana bread slump and create a delicious cake with a kick.

Method:

Step 1

Place the butter and sugar into a mixer and beat with the paddle until the mix goes pale.

Gradually beat in the eggs and then the mashed-up bananas.

Step 2

Lower the speed and add the flour, salt, bicarb, baking powder, cinnamon and walnuts then mix until the mixture is well combined.

Step 3

Fold in the chocolate.

Step 4

Place the mix into a well buttered, floured cake tin.

Bake in a preheated oven set at 180 degrees for approximately 40-45 minutes.

Step 5

Test it’s cooked by inserting a knife into the middle of the cake and it should come out clean.

Leave the cake in the tin for at least 15 mins and then turn it out onto a cooling rack to cool down.

Once it’s cooled, grab a plate and tuck in!
