Jon’s Oat & Pecan Biscuits

It’s that special time of the month again where our chefs share with you another one of their indulgent recipes. This month, it’s Jon’s oat & pecan biscuits. Eat them cold or warm, with a mug of tea or a cup of hot chocolate – There is no wrong way to devour this delicious treat!

Makes 20-30 biscuits


  • 170g Demerara sugar
  • 170g Butter
  • 110g Caster sugar
  • 1 Medium egg
  • 20ml Water
  • 110g Plain flour
  • 1 level tsp of salt
  • 1/4 tsp of Bicarbonate of soda
  • 250g Porridge oats
  • 125g Pecan nuts


  1. Cream the butter and the sugar until white and fluffy
  2. Gradually add the beaten eggs and water and continue to beat until smooth
  3. With a rolling pin crush the pecan nuts into small pieces
  4. Add all the ingredient and mix until smooth
  5. Roll the biscuit dough into cylinders and freeze for 30 minutes
  6. Cut into 1 1/2cm pieces and bake at 140°C until golden brown
  7. Allow to cool… and ENJOY!
