Jon’s Oat & Pecan Biscuits
It’s that special time of the month again where our chefs share with you another one of their indulgent recipes. This month, it’s Jon’s oat & pecan biscuits. Eat them cold or warm, with a mug of tea or a cup of hot chocolate – There is no wrong way to devour this delicious treat!
Makes 20-30 biscuits
Ingredients:
- 170g Demerara sugar
- 170g Butter
- 110g Caster sugar
- 1 Medium egg
- 20ml Water
- 110g Plain flour
- 1 level tsp of salt
- 1/4 tsp of Bicarbonate of soda
- 250g Porridge oats
- 125g Pecan nuts
Method:
- Cream the butter and the sugar until white and fluffy
- Gradually add the beaten eggs and water and continue to beat until smooth
- With a rolling pin crush the pecan nuts into small pieces
- Add all the ingredient and mix until smooth
- Roll the biscuit dough into cylinders and freeze for 30 minutes
- Cut into 1 1/2cm pieces and bake at 140°C until golden brown
- Allow to cool… and ENJOY!
